Thatching is the layering of dry vegetation such as reed or mixed grass.

Creating a thatched roof on top of buildings.
Bundling hay into hay bundles or hay stacks for animals to eat from.
Creating grass tiles outside and in buildings.
When creating a grass tile, you would plant thatch in a cultivated dirt tile just like you would a flower or mixed grass.
