This is for stone houses:
 
The wall starts at 1QL. Each action including creating the wall adds (Mortar QL + Brick QL)/21 to the wall. The completed wall therefore has a quality of up to 1QL + 20 * (Mortar QL + Brick QL)/21. Depending on your masonry skill and quality of the tools you may get less on each action.
 
 
 
It's probably similar for stone walls:
 
When you start the stone wall you will get up to 1QL + shard QL / 10. Each additonal shard adds up to shard QL / 10.
 
 
 
The whole process is still influenced by the skill. If you have high skill you will likely end up with max QL. If your skill is lower than the materials you'll likely get reduced quality.

Description

Skill Requirements

  • At least 30 masonry skill is required to build stone walls.
  • See multi-story housing for more information regarding skill requirements on additional floors.

Creation

  • Have at least 1 Stone brick and 1 mortar in your inventory.
  • Activate a trowel and right-click on a wall plan.
  • Select Build and then Stone wall.
  • Continuation requires at least 1 Stone brick and 1 mortar in your inventory.

Modifying

  • Pliers are used for modifying the wall into its trimless version, the Plain stone wall. Activate the tool and right-click the wall, then select Remove Decorations.
  • You can turn walls to suit your needs by right-clicking them, and selecting Rotate wall.
